I've been meaning to make these for ages.
In our house we often head out the door to exercise & need something to grab before a sports training or the gym.
These are perfect, a decent dose of protein, not a full meal but enough to train on.
They are pretty tasty too.
I try to be gluten free for my gut health, I'm not strick about it. And I like to have some gluten free for the teen in the house who often has a roll or sandwich for lunch. So anything extra I make give him variety in his diet, not overloading his system with gluten.
Recipe
Makes 9
Ingredients
3 cups almond meal
1.5 cups cottage cheese, blended or flattened with the back of a spoon
2 eggs
decent handful of herbs chopped, parsley & chives, any herbs can work
2 tbsp grated parmesan or other cheese or choice (optional)
2 tsp baking powder
½ tsp salt
Preheat to oven to 175 degree C.
Line a baking tray with baking paper.
Lightly beat the eggs, blend the cottage cheese or flatten it with the back of a soup; this helps the mixture hold together.
Whisk together the almond meal, baking powder, salt. You could add other spices here, some cayenne pepper would be great. Add the cheese & herbs, then add the wet ingredients to the dry & stir to combine. The mixture will be quite sticky.

Using an oiled ⅓ cup measuring cup, to scoop into 9 moulds onto the baking paper.

Bake in the preheated oven for 15 mins until golden on top & cooked in the centre.
