Vegan Chocolate Mousse

In need of a healthy sweet treat?
While it does contain some sweetener, from the chocolate and maple syrup, it is clean and healthy otherwise with good fat from the avocado.

I've made vegan chocolate mousse in the past, with just aquafaba or just avocado. I find the aqufaba alone too light and the avocado very rich and dense. I've combined them and was happy with the texture and flavour. We do eat eggs & dairy, but I like to vary our diet for a wide range of nutrients, and I don't always feel my body needs dairy.

Chocolate contains some magnesium and polyphenols, cinnamon may assist with blood sugar balance.

This recipe makes 4 servings:

Ingredients

½ cup aquafaba (water from drained chickpeas) *
1 ripe avocado
200g quality dark chocolate
1 tbsp maple syrup (optional)
½ tsp cinnamon (optional)
pinch of ground chilli (optional)

*aquafaba is an egg substitute, using the water of cooked chickpeas, you can used canned. I prefer from ones I've cooked myself as then I am sure there are no additives.

Method

In separate bowls;
Melt chocolate gentle over a double boiler, add cinnamon & chilli, then set aside to cool
Whisk aquafaba until stiff peaks (about 10 mins with electric beater), add maple syrup and whisk a further few minutes
Mashed avocado well

Gently fold chocolate into avocado till well combined
Fold in half the aquafaba to lossen to mixture, then add the rest

Spoon into serving dish or individual ramakins.
Store in the fridge to set for 1-2 hrs.
Can be eaten immediately if you can't wait 😊💚
