No Bake Chocolate, Date & Nut Bites

I've been craving something sweet lately so make some super easy raw healthy sweet treats. I used to make these all the time but hadn't for ages. They are natural healthy treats you can easily make and have in the fridge or freezer for when you need something sweet but still healthy. They are packed with healthy fats, fibre, polyphenols, & also contain protein.

I'm not great with recipes & often just make things up so feel free to adjust these to your liking. They could be nut free if needed just by replacing the nuts with more seeds. You could also switch out the walnuts for other nuts of choice & the peanut butter for other nut butter or tahini.

Makes approx 20

Recipe

1 cup dates

1 cup walnuts

½ cup pumpkin seeds

½ cup sunflower seeds

½ cup coconut

¼ cup hemp seeds

¼ cup cacao nibs

¼ cup extra virgin olive oil

3 Tbsp peanut butter

1 tsp vanilla

pinch of salt

100g dark choc

1 tbsp extra virgin olive oil

1 tsp cinnamon 

Method

Put all ingredients except coconut & cacoa nibs, chocolate,  tbsp extra virgin olive oil & cinnamon into a blender or kitchen whizz & blend into chunks but not a paste. Ensure mixture will hold together, if not add more dates, oil or peanut butter.

Mix in coconut & cacao nibs.

Firmly press into mini muffin trays. refrigerate.

Once cold heat chocolate & tbsp olive oil gently in a pan on a low heat until just melted. Add cinnamon & stir to combine. Top each one with 1 tsp chocolate and smooth over entire surface. This helps hold the bite together.

Return to the fridge to set.

Transfer to an airtight container. Store in the fridge or freezer.
